Ingredients
  

  • 1 packet Qetoe Rice
  • 200g ground beef
  • 1 tablespoon olive oil
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup chicken stock
  • Fresh cilantro for garnish

Method
 

  1. In a large frying pan, heat olive oil over medium heat.
  2. Add the diced onion and sauté until translucent, about 3 minutes. Stir in garlic, cooking until fragrant, about 1 minute.
  3. Add the ground beef to the pan, breaking it apart and browning it until fully cooked, around 5 minutes. Season with chili powder, cumin, paprika, salt, and pepper.
  4. Pour in the chicken stock, bringing to a simmer and letting it reduce slightly for about 3-4 minutes.
  5. Stir in the diced bell pepper and simmer until just tender, about 2 minutes more.
  6. Meanwhile, prepare Qetoe Rice by covering it with boiling water and letting it sit for 5 minutes before fluffing with a fork.
  7. Serve the beef mixture over Qetoe Rice and garnish with fresh cilantro.

Notes

Feel free to add other low carb vegetables like zucchini or spinach for extra nutrition and colour!
The use of Qetoe Rice significantly lowers the carbohydrate count compared to traditional rice, making it suitable for low-carb diets while providing that familiar fluffy texture.
