Ingredients
  

  • 1 cup natural creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sweetener (erythritol-based)
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar-free dark chocolate chips
  • 1 tablespoon coconut oil

Method
 

  1. In a medium bowl, beat the softened butter, peanut butter, sweetener, and vanilla extract together until smooth and creamy.
  2. Using a small scoop or spoon, form the mixture into 12 small, bite-sized balls and place them on a tray lined with baking paper.
  3. Place the tray in the freezer for 10 minutes to firm up.
  4. While the balls are chilling, melt the dark chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals until glossy.
  5. Remove the balls from the freezer and dip each one into the melted chocolate, shaking off the excess.
  6. Place back on the tray and refrigerate for another 15 minutes until the chocolate shell is set and crisp.

Notes

Keep these stored in an airtight container in the freezer or fridge. They taste best served chilled for that perfect satisfying snap of the chocolate coating.
By using an erythritol-based sweetener instead of cane sugar, we've reduced the net carbs per serve to just under 3g, making these a perfectly keto-friendly dessert option.
