Ingredients
Method
- Preheat your oven to 200°C and line a large baking tray with non-stick baking paper.
- In a small bowl, mix the mozzarella, parmesan, oregano, and garlic powder until well combined.
- Scoop tablespoon-sized mounds of the cheese mixture onto the tray, spacing them 5cm apart to allow for spreading.
- Place one slice of pepperoni on top of each mound if desired.
- Bake for 8-10 minutes or until the edges are golden brown and crispy.
- Remove from the oven and let them cool on the tray for 2 minutes—this helps them crisp up perfectly before serving.
Notes
Don't rush the cooling process! The cheese needs a moment to set after leaving the oven so they achieve that satisfying 'snap' instead of being chewy.
By removing the traditional flour-based pizza dough and focusing on a high-protein, high-fat cheese base, we drop the carb count significantly while keeping the indulgent pizza flavours intact.
