Ingredients
  

  • 1 packet Qetoe Rice
  • 400g chicken breast, diced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 cup Greek yoghurt
  • 1/2 continental cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1/4 cup cherry tomatoes, halved
  • 1/4 red onion, finely sliced

Method
 

  1. In a bowl, mix the chicken with olive oil, dried oregano, salt, and pepper.
  2. Heat a large pan over medium-high heat. Add the chicken and cook for 6-8 minutes until golden and cooked through.
  3. While chicken cooks, combine the Greek yoghurt, grated cucumber, minced garlic, and lemon juice in a small bowl to make the tzatziki.
  4. Prepare the Qetoe Rice by placing it in a bowl and pouring boiling water over it; let it sit for 5 minutes, then drain any excess liquid well.
  5. Assemble the bowls by layering the fluffy Qetoe Rice as the base, top with the warm chicken, cherry tomatoes, and red onion.
  6. Finish with a generous dollop of tzatziki and serve immediately.

Notes

For the best tzatziki, ensure you squeeze the excess water out of the grated cucumber using a clean tea towel—this keeps the sauce thick and creamy instead of watery.
