Ingredients
  

  • 2 ripe avocados, pitted and peeled
  • 1/4 cup high-quality cocoa powder
  • 1/4 cup erythritol or powdered monk fruit sweetener
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1 pinch of sea salt
  • Optional: 1 tbsp crushed sugar-free dark chocolate for topping

Method
 

  1. Scoop the flesh of the avocados into a food processor or high-speed blender.
  2. Add the cocoa powder, sweetener, almond milk, vanilla extract, and salt.
  3. Blitz on high for 1-2 minutes, scraping down the sides as needed, until the mixture is completely smooth and glossy.
  4. Taste the mousse and adjust sweetener if you prefer it slightly sweeter.
  5. Spoon the mousse into small serving cups or ramekins.
  6. Chill in the fridge for at least 30 minutes to set before serving with an optional sprinkle of dark chocolate.

Notes

For the smoothest possible texture, ensure your avocados are perfectly ripe; they should be soft to the touch but not brown inside.
