Ingredients
  

  • 2 medium capsicums (red or green)
  • 200g minced beef
  • 1 packet Qetoe Rice
  • 100g diced tomatoes (fresh or canned)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp Italian herbs
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)
  • Fresh parsley for garnish (optional)

Method
 

  1. Preheat the oven to 190°C (375°F).
  2. Cut the capsicums in half lengthwise and remove the seeds. Place them in a baking dish, cut side up.
  3. In a large frying pan, sauté the onion and garlic until soft. Add the minced beef and cook until browned. Drain excess fat if necessary.
  4. Stir in the diced tomatoes, smoked paprika, Italian herbs, salt, and pepper. Let simmer for 5 minutes.
  5. Prepare the Qetoe Rice according to package instructions: cover with boiling water, sit for 5 minutes, fluff, and incorporate into the beef mixture, mixing well.
  6. Fill each capsicum half with the beef and Qetoe rice mixture, pressing down lightly to pack it in. Sprinkle with cheese if desired.
  7. Bake in the preheated oven for 25-30 minutes until the capsicums are tender and the cheese is melted and golden. Sprinkle with fresh parsley before serving.

Notes

Feel free to customise the filling by adding herbs or spices to suit your taste! A dash of hot sauce can also add a nice kick.
