Ingredients

  • 1 cup almond flour
  • 1/2 cup shredded coconut (plus extra for rolling)
  • 2 tablespoons almond butter
  • 1 tablespoon coconut oil, melted
  • 2 tablespoons sugar-free maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of sea salt

Method

  1. In a large mixing bowl, combine the almond flour, shredded coconut, and sea salt.
  2. Add the almond butter, melted coconut oil, sugar-free maple syrup, and vanilla extract.
  3. Mix until a firm, cohesive dough forms. If it feels too dry, add an extra teaspoon of coconut oil.
  4. Roll the mixture into 10 evenly sized balls using your hands.
  5. Pour extra shredded coconut into a small shallow dish and roll each ball until evenly coated.
  6. Place the bliss balls in the fridge for 30 minutes to set before serving.

Notes

For the best texture, ensure your almond butter is smooth and room temperature before mixing. If you prefer a crunch, add chopped toasted almonds into the dough mixture.
By replacing traditional oats and dates with almond flour and sugar-free syrup, we have significantly reduced the carbohydrate content while keeping the texture and indulgence high.
